How do I use the things I have in my inventory that do not say use?

These items are normally items that you have crafted as part of a quest, or are supplies required to craft a specific item. To "use" them in crafting, simply enter the building that has the required crafting bench, click the Create button and it will deduct the required amount from your inventory.
